How to Make: Roasted Sweet Potato Quinoa
2 sweet potatoes chopped (I bought the package of pre-cut)
2 cups of thinly sliced kale
1 cup cooked quinoa
1/2 cup dried cranberries
1/2 cup diced feta
salt & pepper
For the dressing:
juice of a lemon
1/4 cup olive oil
1 tbsp diced garlic
1 tsp garlic salt
Mix everything together and enjoy!
