With Spring upon us and warm weather around the corner, I'm refreshing our go-to recipes with lighter dishes that are still packed with flavor. While heavy pasta dishes are great for warming up in the winter, this pasta is wonderful for a less dense meal, but still super delicious. Plus, anything with fresh burrata is a win in my book (I recently began a love affair with it when D's mom spoiled us with it almost every day in California!)
How to Make: A Simple Pasta Dish
butter
olive oil
garlic
lemon zest & juice
spaghetinni
cherry tomatoes
fresh basil
burrata cheese
Saute butter, olive oil, lemon zest, lemon juice and garlic in deep frying pan.
Cook pasta in salted water until still a little bit firm.
Add tomatoes, pasta, and a few tablespoons of pasta water to frying pan.
Toss, coating pasta with oil, stir in basil at the last minute.
Top with burrata.
