strawberry lemon mascarpone cream tart
This recipe popped up on a sidebar ad as I was browsing a blog last week. With 'Friendsgiving' coming up, I had been looking for a new dessert to try, and knowing the hostess' favorite is cheesecake, this was an easy choice. As it turned out, not only an easy choice, but also an easy recipe. The crust is the only part that requires baking, and for a short ten minutes at that. The filling combines whipping cream with mascarpone and lemon juice for a fresh creamy flavor. The berries were perfectly ripe and provided a lovely tart sweetness.
I would also use this recipe as a base to work off - I could see adding in cinnamon to the filling and topping with apples and caramel or switching the graham cracker crust for oreo and adding orange zest and juice to the filling.
This cheesecake was such a big hit, I almost felt guilty about how easy it was to whip up! Definitely one to file away for future use in the recipe book.
