There's really nothing better than all the fresh veg that's available during the summertime. This year I'm especially enjoying green beans. They hold a slight crisp when cooked and take on flavors so wonderfully and this sauce I recently made only makes them even more desirable. By roasting the red peppers there was a smokey-sweet taste that paired deliciously with the tangy goats cheese. This is a great, simple recipe for adding a little zest to everyday veggies.
{ tip: run the roasted peppers under water as you peel back the charred skins }
How to Make:
(serves 4)
Boil beans for 5 minutes, rinse in cold water and drain.
Roast 1 red pepper on bbq until skin is completely charred.
Peel skins and roughly chop into pieces.
Add peppers and 1/3 pack of goats cheese into food processor.
Process two ingredients until desired texture. Add salt and pepper to taste.
Enjoy.
