lobster rolls


When lobster's on the menu, I can't help but be reminded of memories of happy meals enjoyed with loved ones. Lobster is one of those luxuries that I feel is always best enjoyed in the company of people you love. It's special and delicious and we decided to share some lobster love with homemade lobster rolls when we had D's family over yesterday. We went to the Asian supermarket T&T to get the lobster, which was a fun and overwhelming experience all in one. We kept the ingredients simple and it turned out great. Buttery buns combined with the creamy lobster salad made for a yummy lunch spent catching up and playing with babies. 








How To Make: Lobster Rolls
serves 6 adults

5-6lbs of lobster
top-cut hot dog buns
6 tbsp butter
3/4 cup diced celery
1/2 cup diced green onion
1/2 cup light mayonnaise
1/4 cup light sour cream
2 tbsp lemon juice
1 tbsp white pepper
salt to taste

Boil you lobster for approximately 12 minutes (we googled how long to cook it - and cooked it the day before which helped with our prep time). Shell the lobster and put aside meat in a bowl. 
Stir in diced celery and green onion and combine sour cream, mayo, lemon juice and pepper. Combine, cover and place in fridge. 
Melt butter in frying pan then dip the outer sides of the hot dog buns in the pan. Place on baking sheet and broil until golden brown - about 3 minutes per side. 
Spoon lobster salad into warm buns and serve! 

Insider Tip: I asked the owner of Rock Lobster (via Instagram) for tips on making lobster rolls and he said to use lots of butter! Because really, who doesn't love lots of butter with their lobster!
