a simple tomato salad


We first tried this salad when we were at D's cousins house and so enjoyed it that we ended up trying to recreate it on our own weeks later. It's since become a personal favorite. For how simple the ingredients are it is so amazingly delicious. For oncoming chilly fall nights, its a perfect warm side salad that still tastes light and fresh.




How To Make It:

2 pints of grape/cherry tomatoes - cut in halves
6 mini bocconcini - cut in quarters
5 large basil chopped finely
homemade croutons
1 shallot - sliced finely
diced garlic
olive oil
butter
salt & pepper

2. Use the same pan and sauté the shallot, garlic, olive oil and butter until shallot is soft
3. Add in half of the halved tomatoes and cook until softened
4. Combine uncooked tomatoes, cheese, basil, croutons in serving bowl
5. Stir in cooked tomatoes 
6. Enjoy!
