chicken chili


We got a crock pot for Christmas and have loved trying out new recipes. Coming home to a cooked meal at 6pm is pretty darn awesome. I'm not a huge fan of beef chili but we decided to give ground chicken a try. We used canned vegetables for the sake of convenience and let the batch cook on low for 4 hours while we were at work. If I were to make it again I think there would be a few changes (I'm not sure what I was thinking when I added carrots...) but regardless of my temporary lack of judgement, we still enjoyed a yummy, hearty meal - with lots of leftovers! 
We topped our bowls with smoked gouda, green onion and sour cream for an extra tasty chili dinner.
